Kentang sebaiknya disimpan di tempat sejuk, gelap, dan kering. Cahaya merupakan salah satu pemicu penghijauan dan peningkatan glikoalkaloid, sementara kondisi penyimpanan dan lama penyimpanan turut memengaruhi kadar senyawa tersebut.
Kalau mau membuat jus kentang, periksa warna, tunas, mata, kerusakan, dan rasanya terlebih dahulu. Untuk kentang yang sudah sangat hijau atau banyak bertunas, jangan mengonsumsinya.
